Tip of the Month: June

In the summer on the grill put in individual tin foil squares: Idaho potatoes, onions, garlic, pat of butter and cheddar cheese. Twist up like a Hershey's Kiss, put on the grill and we call them "Idaho Kiss's"!! Yum with a sizzler steak.

Tater Tips

When making mashed potatoes, I crush up 1 to 2 chicken bouillon cubes and blend into my mashed potatoes, then I add in the 1/2 & 1/2 and butter. When you add bouillon cubes to your mashed potatoes, you will need less salt, so go easy. The amount of chicken bouillon cubes depends on how much mashed potatoes I am making.

Add small can green chilis and 1 cup 1/2 each jack and cheddar cheese to your favorite mashed potatoe recipe,scoop about 1/4 cup mashed potatoe mixture and fold into a flour tortilla. Spray frying pan with cooking oil and brown tortillas stuffed with mashed potatoes creating a "pick-up pierogi".Serve as appetizer with fresh salsa and sour cream.

I love to add buttermilk instead of milk and sour cream. It's one ingredient, it gives it great flavor and texture, and it's lower in fat! (Gotta love that!)

After forgetting to start the potatoes on Thanksgiving one year until everything else was done, I discovered this cool tip. Peel and cut potatoes into small pieces, put them in a glass or other microwave safe dish, just barely cover with water, cover with plastic wrap and pull back one corner to vent and cook for about 7 minutes on high. Simply drain the potatoes and continue as usual.

When you have a light bulb that has broken off in the socket....cut a potato in half and gently press the cut surface of the spud onto the broken light bulb and unscrew it without risk of cutting yourself...
